Grinch Cookies celebrate the holidays with an homage to a favorite Christmas movie. These chewy green cookies are rolled in sugar and embellished with a tiny red heart, just like the Grinch himself!
In a large mixing bowl, cream the butter and sugar together until smooth.
Add the egg, vanilla, and green food coloring. Mix until completely combined, scraping the sides and bottom of the bowl as needed.
In a small bowl, whisk together the flour, baking soda and cream of tartar. Add to the wet ingredients and mix until just combined, being sure to scrape the sides and bottom of the bowl.
Cover and refrigerate dough for a minimum of 1 hour, so that it is easier to roll.
When ready to bake, preheat oven to 375°F.
Shape dough into 1-inch balls, and roll in the green sugar so that the dough is completely covered. Place each ball onto an ungreased cookie sheet about 2 inches apart, and gently press a red heart onto the left side.
Bake for 10 - 11 minutes. Transfer cookies to a wire rack to cool completely.
