4boneless skinless chicken breasts
4tablespoonsmelted butter
5cupscornflakes
1 ½teaspoonsdried parsley
½teaspoonthyme
1large egg
1cupmilk
1cupall-purpose flour
½teaspoonsalt
¼teaspoonground black pepper
Instructions
Preheat oven to 375 degrees F. Prepare a 9x13 inch baking dish with cooking spray.
In a large plastic bag, crush the cornflakes into small crumbs with a rolling pin or food processor.
Add the parsley, and thyme and shake until well combined. Transfer the cornflake mixture to a plate or shallow dish, if desired. (You can also keep the contents in the bag and shake to coat after you've added a piece of chicken.)
Combine egg and milk in a medium bowl and mix well. Whisk in flour, salt, and ground pepper.
Season chicken with a pinch of salt and pepper, then place a chicken breast into the egg mixture, making sure to coat completely.
Transfer the chicken to the cornflake mixture (either on the plate or in the bag). Press it into the crumbs, then turn to coat both sides. Repeat this with each chicken breast and place them in the baking dish in a single layer.
Bake for 30 minutes, until a meat thermometer reads an internal temperature of 165 degrees F and the coating is golden brown and crispy.
Remove from the oven and let it rest for a few minutes, then serve!
