Chicken Quesadillas will become a new favorite meal! With simple, fresh ingredients and a fast prep time, these quesadillas are an easy meal to enjoy on busy weeknights or perfect for a quick lunch.
Lightly butter one side of each tortilla, making sure to cover the whole surface.
Heat a large skillet over medium to medium-high heat, and place the buttered side down of the tortilla onto the pan.
Spread one cup on cheese over the entire tortilla.
Place half of the chicken on only half of the cheese covered tortilla. Then on top of the chicken add half of the tomato, half of the green onion, and sprinkle half of the taco seasoning.
Allow the tortilla to cook for a couple of minutes, so that the bottom becomes toasted and crispy, and the cheese completely melts.
To fold the quesadilla, use a spatula to lift the cheese side over onto the fillings. Gently press together and cook for another minute or so, until completely heated through. Flip and cook on the other side for about a minute.
Place onto a plate and cut into thirds or two halves. Serve with pico de gallo, guacamole, salsa, and sour cream.
