Ingredients
Cinnamon Filling
4tablespoonsunsalted buttermelted
⅓cuplight brown sugar
2teaspoonsground cinnamon
½cupcornstarch
Cookie Dough Base
2 ⅓cupsall-purpose flour
½teaspoonbaking powder
½teaspoonbaking soda
½teaspoonsalt
½cupunsalted buttersoftened
½cuplight brown sugar
¼cupgranulated sugar
2large eggs
1teaspoonvanilla extract
Streusel Topping
4tablespoonsunsalted buttermelted
⅓cupbrown sugarpacked
⅓cupgranulated sugar
1teaspooncinnamon
½cupall-purpose flour
Vanilla Glaze
1cuppowdered sugar
3tablespoonsheavy cream
1teaspoonvanilla extract
Instructions
For the Cinnamon Filling
Add all the cinnamon filling ingredients to a medium mixing bowl. Mix with a fork until completely combined.
Measure the cinnamon filling into 12 1/2 tablespoons-sized pieces. Roll into balls and place on a parchment paper-lined plate. Set aside.
For the Cookie Dough
Preheat the oven to 350 degrees. Line two large baking sheets with parchment paper. Set aside.
Combine flour, baking powder, baking soda, and salt in a small bowl and stir with a whisk.
In a large mixing bowl, beat the softened butter and sugars until light and fluffy. Add eggs and vanilla, then mix until combined.
Add the dry ingredients to the wet ingredients and fold in with a wooden spoon or rubber spatula until combined.
Use a 3-tablespoon cookie scoop to form 6 evenly sized cookies on each baking sheet. Flatten each scoop and add a ball of cinnamon filling to the center of each cookie.
Fold the cookie dough around the filling and roll to create a smooth ball. Repeat with each cookie. Press each cookie down gently to create a flat surface for the streusel.
For the Streusel Topping
Mix all streusel topping ingredients in a small mixing bowl with a fork until well combined.
Add a generous amount to the top of each cookie.
Bake each cookie sheet for 12-14 minutes or until the edges of the cookies turn golden brown.
Remove from the oven and let cool on the sheet while you make the glaze.
Vanilla Glaze
Whisk all the glaze ingredients together in a small mixing bowl, then drizzle over the warm cookies. Remove cookies to a wire rack to cool completely.
