Today’s been a tiring day.
We had unexpected things happening and unexpected errands that needed to be run,
Life happens.
But I baked!!
I have some of the cookie batter that still has yet to be baked because after I mixed it and baked 9 cookies I went to pick up Mr. 365 at work.
Then when I returned I started making dinner.
And then I crashed, barely able to write my post.
Being only 10 days into this I can’t do anything to sabotage it now!
Lack of pictures is one thing, but skipping a post is completely different.
I’ll get some pictures up tomorrow.
This is odd seeing just black and white and no color.

Toasted Almond Toffee Cookies – makes about 3 dozen
Ingredients
2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (16 tablespoons / 2 sticks) unsalted butter, softened
3/4 cup packed light brown sugar
3/4 cup granulated sugar
3/4 teaspoon vanilla extract
1/2 teaspoon almond extract
1 cup almond slices
1 8 ounce bag toffee bits
Directions
Preheat oven to 375 degrees F.
Once oven is heated, place almond slices on a baking pan in a single layer.
Toast in the oven for 4 minutes. Remove and stir, returning them to a single layer.
Place in oven and toast for another two minutes or until a few of the slices are slightly browned.
Remove and set aside.
In a mixing bowl with the paddle attached, combine butter and both sugars. Cream until light and fluffy.
Add eggs, almond and vanilla extracts. Mix until well combined.
In a small bowl, whisk together the flour, baking soda and salt.
Gradually add the flour mixture.
Mix in the almonds and toffee bits.
Place by tablespoons onto a cookie sheet.
Bake for approximately 10 minutes or until cookies are lightly golden.
Allow to cool on baking sheet for a few minutes until transferring to a wire rack.
I rate everything on a scale of 1-4 and these Toasted Almond Toffee Cookies earned…aahhhh, I don’t know what to give them.
I wasn’t nuts about them to be honest. The flavor was eh and I thought they could’ve used some chocolate.
Isn’t everything better with chocolate?
And they were F-L-A-T!! For some reasons my cookies come out flat A LOT.
That’s something I’m going to have to figure out.
Mr. 365 liked them. He really liked them.
Some days I think he’d eat anything that I’d stick in front of him.
I’m giving these cookies a 2 on that rolling pin scale of 1-4.
I wouldn’t exactly qualify this as a “baking fail”, but it was darn near close.
