I received this recipe from mother.
Adapted from the cookbook Chicken Expressions by Normand Leclair.
Mustard Pecan Chicken – serves 4
4 boneless, skinless chicken breasts
1/4 cup yellow corn meal
1/4 cup Italian style bread crumbs
1 cup mayonnaise
2 teaspoons whole grain mustard
1/2 cup chopped pecans
2 teaspoons olive oil
Preheat oven to 425 degrees F.
Prepare a 9 x 13-inch baking dish by spraying it with cooking spray and adding the olive oil to coat the bottom.
In a small mixing bowl, combine mayonnaise and mustard and mix well; set aside.
In a flat dish, combine cornmeal and bread crumbs. Mix well.
Dredge chicken breasts through crumb mixture being sure to coat both sides.

Place into prepared baking dish.

Spread mayonnaise mixture on each chicken breast.

Sprinkle pecans on top.

Bake for 20 minutes.

I totally understand the without an oven catastrophe. I had went through that in October. It made me sad and like you said, many women before us did it. How? I’ll never know.
