I use it in a lot of our meals, but when I say “a lot of our meals” I’m talking more dinner. I don’t think I’ve ever served it at breakfast (that really doesn’t sound appealing to me) and rarely do we have it for lunch unless there’s leftover chicken breast from the night before which I’ll cut up to put into a green salad.

When I was little, mom always used to put notes in my lunch box. It was always such a fun surprise and every day I wondered what she’d write next. I remember how wonderful it was to know that mom was thinking of me in the middle of my day.
Her notes always made me feel warm and fuzzy inside, especially if my day wasn’t going so well. It was like mom and I had this special secret that nobody else knew about. I thought it was important to continue this with my kids, so they’d often find a note or two well into their high school years. Towards the end, there might have been a little incentive to embarrass them as well. 😉

Cranberry Apple Chicken Salad
Ingredients
- 3 cups shredded cooked chicken
- ½ cup Best Foods Real Mayonnaise
- ½ cup chopped celery
- ½ cup dried cranberries
- ½ cup chopped apple
- 1 teaspoon lemon juice
- ½ teaspoon kosher salt
- â…› teaspoon white pepper
- 2 slices of the bread of your choice Romaine lettuce, tomato slices
Instructions
- In a large bowl, combine all ingredients.
- Mix together until well combined.
- Place lettuce and tomato slices on one slice of bread. Top with 1/4 - 1/2 cup of the chicken salad, depending on the size of the bread you're using.
- On the inside of the second bread slice, write a note to surprise your child at lunchtime.
- Gently place the slice of bread on top of the chicken salad.
