It’s already September, people. Where did summer go??
It’s been pretty cool seeing the school buses rolling around town again. Oh, that song, “Wheels on the Bus” just popped into my head! I always used to sing it when I was little and my kids LOVED it, especially the bus driver saying in his very deep voice, “Move on back!”
So with school comes lunches and packing them. I have to admit that I really looked forward to the day when the kids were packing their own, but I also have to admit that I missed it. I wanted to make sure that what they were going to pack for themselves was going to be as tasty and healthy as what I would have made, not the 3 bags of cookies, a juice box and maybe an apple.
Fortunately, we started good eating habits early and instilled in them the importance of eating certain foods and moderating the intake of others.

I was perusing lunch ideas on Pinterest the other day when I came across these great and easy O Organic lunch recipes through Albertsons. There were Apple Fries with Cinnamon Dipping Sauce, the DIY Strawberry Lemonade Fruit Leather, these Turkey Pesto Pinwheels, or my favorite, the Chicken Salad Wraps, and lots of others!
They’re great and healthy ideas using O Organic products that you can feel great about using. They’re USDA certified organic, and over 400 of their products and can be found exclusively at Albertsons Safeway Stores throughout the country.
Oh, there’s also a fun YouTube video on how to make that incredible DIY Strawberry Lemonade Fruit Leather. I wanted to grab it right out of the woman’s hand, I did!

No-Bake Peanut Butter Energy Bites
Ingredients
- ⅔ cup unsweetened flake coconut
- ½ cup rolled oats
- ½ cup O Organics Honey Nut O's
- ½ cup O Organics Old Fashioned Creamy Organic Peanut Butter
- ½ cup flax meal
- ⅓ cup slivered almonds
- ⅓ cup dried blueberries
- 3 tablespoons O Organics Organic 100% Pure Maple Syrup
- 2 tbsp. honey
- 1 teaspoon pure vanilla extract
- ½ teaspoon O Organics Ground Cinnamon
Instructions
- In a large mixing bowl, combine all ingredients.
- Mix with a rubber spatula until well combined.
- Refrigerate for a half hour. This will make the dough easier to roll into balls.
- Using a rounded tablespoonful of dough, roll into a ball.
- Store in the refrigerator in an airtight container.
These No-Bake Peanut Butter Energy Bites will give your child the pick-me-up they need to tackle the rest of their day at school and you’ll feel great about packing them knowing that they’re made with organic ingredients.
The kids won’t know that though, they’ll just want to eat them because they’re delicious! 😉
