Happy almost July!!
Only 178 days until Christmas. LOL Can you believe it? Sorry, I really couldn’t resist.
Plus I CANNOT believe how quickly this year is going. It’s nuts!!
We’re coming up on my most favorite holiday of the year – 4th of July. I grew up absolutely LOVING fireworks because in my hometown of Wickford, RI, they always had (and still do!) the fireworks display on the 3rd of July. I’m an only child and my parents told me every year that they were my fireworks because it’s my birthday. Of course, when I was little I believed them, not knowing we were really celebrating Independence Day.
To this day, my birthday isn’t complete if I don’t see some on the 3rd. I’m still spoiled, what can I say. π I won’t be baking my cake, nor will anyone else. The 56 year tradition continues with a Carvel Ice Cream Cake – one of my favorites for sure.

Tip of the Week:
Have a fresh recipe that you need fresh ginger for? Don’t peel it with a knife, use a spoon! Yes, believe it or not, the skin on the ginger root comes off more easily just by running a spoon against it as opposed to a small knife or vegetable peeler. It does well with the nooks and crannies. I couldn’t believe it myself the first time I did it.
